matcha pudding

this matcha pudding recipe makes a creamy and rich dessert that is super delicious and also jiggles  🍵🍮 (๑⃙⃘´༥`๑⃙⃘) it is an easy, non-bake recipe that you can easily make at home with only 5 ingredients! it makes 2 puddings

 

 ingredients

  • 8g of high-quality matcha 
  • 300mL milk of choice
  • 30g sugar
  • 6g of gelatine powder or 3g of agar agar powder
  • 50g heavy/whipping cream

 

instructions

  1. sift and combine all the matcha powder with 50mL of milk, mix until no visible clumps
  2. heat up 250mL of milk, sugar and gelatine (or agar agar) powder over low heat and stir until everything is dissolved
  3. remove from heat and let it slightly cool before adding in the matcha milk mixture and heavy cream
  4. mix until well combined and pour into pudding moulds or small cups
  5. let it cool to room temperature and then refrigerate for 4 hours or until your desired
  6. [optional] make and add matcha mitsu (syrup) by combining 2 grams of matcha, 30mL of sugar and 15mL of hot water

 

extra tips:

  • low temp: heat up the milk, sugar and gelatine over low heat, while stirring continuously, to avoid burning
  • high-quality matcha: we recommend using KORAI
  • use a sieve to pour the mixture before it goes into the moulds/cup which will prevent any clumps of matcha or undissolved gelatine/agar agar powder
  • the more time spent refrigerated it will be more of a jelly like texture, let it thaw in room-temperature for it to come back to the pudding texture
  • if you prefer a silkier texture replace some whipping cream with milk using a 1:1 ratio or if you prefer a creamier texture you can do the opposite
