this matcha pudding recipe makes a creamy and rich dessert that is super delicious and also jiggles 🍵🍮 (๑⃙⃘´༥`๑⃙⃘) it is an easy, non-bake recipe that you can easily make at home with only 5 ingredients! it makes 2 puddings
ingredients
- 8g of high-quality matcha
- 300mL milk of choice
- 30g sugar
- 6g of gelatine powder or 3g of agar agar powder
- 50g heavy/whipping cream
instructions
- sift and combine all the matcha powder with 50mL of milk, mix until no visible clumps
- heat up 250mL of milk, sugar and gelatine (or agar agar) powder over low heat and stir until everything is dissolved
- remove from heat and let it slightly cool before adding in the matcha milk mixture and heavy cream
- mix until well combined and pour into pudding moulds or small cups
- let it cool to room temperature and then refrigerate for 4 hours or until your desired
- [optional] make and add matcha mitsu (syrup) by combining 2 grams of matcha, 30mL of sugar and 15mL of hot water
extra tips:
- low temp: heat up the milk, sugar and gelatine over low heat, while stirring continuously, to avoid burning
- high-quality matcha: we recommend using KORAI
- use a sieve to pour the mixture before it goes into the moulds/cup which will prevent any clumps of matcha or undissolved gelatine/agar agar powder
- the more time spent refrigerated it will be more of a jelly like texture, let it thaw in room-temperature for it to come back to the pudding texture
- if you prefer a silkier texture replace some whipping cream with milk using a 1:1 ratio or if you prefer a creamier texture you can do the opposite
